Madrecuixe is a wild agave that takes 10 to 15 years to fully grow and is harvested 3,000 ft high in elevation. The pias are earth roasted for 3 to 8 days and their juices pressed using a traditional stone mill. It is naturally fermented in a wooden vat for 6 to 8 days and double distilled in copper stills. It is bottled at 47%
